Ingredients:
wholemeal bread crumbs
1 finely chopped onion
6 eggs
1/2 cup reduced fat grated cheese
2 tbs wholemeal flour
1 tsp crushed garlic
2 tsp Italian herbs
3 cups vegetables chosen from:
spinach, zucchini, mushroom, pumpkin, sweet potato, capsicum, corn, broccoli, asparagus, carrots, tomato
Method
Step 1.
Preheat oven to 180°C. Lightly grease quiche dish and add a thin layer of breadcrumbs to cover the base and sides.
Step 2.
In a large bowl, add 3 cups of vegetables, 1/2 cup of grated cheese, crushed garlic and Italian herbs. The vegetables I used were pumpkin (cooked in a microwave for 1 minute to soften), capsicum, zucchini and spinach.
Step3.
Lightly beat eggs and add to mixture with 2 tablespoons of flour.
Step 4.
Pour mixture in quiche dish and place in oven for 30-40 minutes or until golden brown and egg is set.
